Damson Plums make wonderful jam.
This is one method of making the jam.
Buy about 1 ½ pounds of Damson Plums.
Remove stones – these are not freestone and you will have to work at digging them out. It’s worth it – persevere.
Measure 4 cups of plums (about 1½ pounds). Put in the widest and deepest pot you own and add 1 cup of water. Cook gently for about 15 minutes until the peels soften and the mixture is reduced.
Take off heat and add 2 ½ cups of sugar. Bring back to a boil and cook, stirring frequently, until the jam thickens. This will take about 20 minutes.
Note: If you don’t like peel, use the immersion blender to get out any large pieces.
This should make 3-4 cups of jam.
This recipe can be easily doubled but will increase the cooking time.
